White wine made with Godello grapes from our vineyard located in Pazos-Verín, near our winery. The vineyard covers 7 hectares planted with the Godello and Mencia varieties. The Godello variety grown on this estate is the grape used in this wine. The main differences in this wine come from the vineyard, which was planted in 1970, and the age of the vines provides a lower yield compared to younger vines. However, this gives us superior quality and concentration of the wine’s components, resulting in a fruitier wine with more body and structure than Godellos from younger vines.
Production begins with a double selection of the grapes, in the vineyard and then in the winery using a sorting table. Depending on the vintage, the grapes undergo a short, low-temperature maceration process with their skins. The wine is then pressed and transferred to stainless steel tanks where alcoholic fermentation begins. Finally, it remains in contact with the fine lees for five months before being released to the market.
A wine with great body and structure, it is ideal for fatty or baked fish and also pairs perfectly with Asian dishes.
